Ingredients

Cake
  • 3 cups all purpose flour spooned and leveled
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg freshly grated if possible
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground allspice
  • 1/2 tsp fine salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup apple cider full strength, no reduction needed
  • 3/4 cup unsweetened applesauce this is what keeps the cake moist
  • 2/3 cup neutral oil canola or avocado oil both work
  • 2/3 cup dark brown sugar packed
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs room temperature
Cinnamon Sugar Coating
  • 5 tbsp butter melted
  • 3/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Method

  1. Set the oven to 350F. Coat a standard 10 cup bundt pan very thoroughly, pushing grease into every groove and corner so the cake releases cleanly. A baking spray made with flour or a homemade butter and flour paste works best.
  2. Whisk the flour, cinnamon, nutmeg, cardamom, allspice, salt, baking powder and baking soda together in a medium bowl until evenly blended, then leave it aside.
  3. Stir the apple cider and applesauce together in a large measuring cup. Leave it at full strength, since the applesauce supplies all the moisture the cake needs.
  4. In a large bowl, beat the oil with the dark brown sugar and granulated sugar until the mixture turns glossy and loose instead of looking like wet sand.
  5. Beat in the eggs one at a time, mixing well after each addition, then add the vanilla and beat until the batter looks smooth and has lightened a shade.
  6. Add the dry mixture and the cider mixture to the sugar mixture in alternating batches, starting and finishing with the flour. Mix only until the last dry streaks vanish, and no longer.
  7. Scrape the batter into the prepared pan and level the top. Bake for 40 to 50 minutes, until a wooden skewer pushed into the deepest part comes out clean.
  8. Let the cake rest in the pan for 10 minutes, then turn it out onto a cooling rack placed over a baking sheet. While the cake is still warm but not too hot to touch, brush it all over with melted butter and press on a generous layer of cinnamon sugar. Give the crust a few minutes to set before cutting.

Notes

Keep the finished cake in an airtight container at room temperature for up to 3 days, or refrigerate it for up to a week and warm individual slices for a few seconds before serving.
For mini bundts, this batter fills about 12 cavities three quarters of the way; bake them 18 to 22 minutes and coat them while still warm.
The coating only sticks to a warm cake, so melt the butter and mix the cinnamon sugar before you invert the cake out of the pan.
Overmixing is the most common way to end up with a tough cake, so fold gently once the dry ingredients go in and stop the moment the batter is uniform.
If you are out of the individual spices, swap in 2 1/2 teaspoons of pumpkin pie spice for the cinnamon, nutmeg, cardamom and allspice.
Brush off excess cinnamon sugar from the serving plate, then offer slices with lightly sweetened whipped cream, vanilla ice cream or a drizzle of caramel.
Let the cake cool completely before wrapping it tightly, otherwise trapped steam will soften the cinnamon sugar crust you worked to build.
