["Banana Bread Without Butter or Oil"]

Ingredients
  

  • 3 Bananas (ripe & large sized) – 345 gramsUse 1 1/2 cups of mashed bananas to be exact.
  • 1/2 Cup Vegetable Oil – 115 milliliters – Use a neutral tasting vegetable oil such as corn oil or mild/light olive oil.
  • 2 Eggs (large) – 114 grams – Large eggs (not extra large or jumbo eggs).
  • 1 Cup White Granulated Sugar 200 grams
  • 2 Cups All Purpose Flour 240 grams
  • 1 Teaspoon Vanilla Extract 5 milliliters
  • 1 Teaspoon Baking Soda 5 grams
  • 1 Teaspoon Baking Powder 4 grams
  • 1/2 Teaspoon Salt 3 grams

Method
 

  1. Preheat the oven to 325°F (163°C).
  2. Mash the bananas thoroughly using a fork.
  3. Beat the eggs lightly.
  4. Combine the bananas, vegetable oil, eggs, and sugar in a large mixing bowl and stir until completely blended.
  5. Incorporate the remaining ingredients and stir with a large spoon until the batter is fully mixed, avoiding an electric mixer to prevent a gummy texture.
  6. Optionally, fold in one cup of preferred add-ins, such as chocolate chips or chopped walnuts, once the batter is mixed.
  7. Pour the batter into a nonstick bread pan and smooth the top surface.
  8. Bake at 325°F (163°C) for 65 to 70 minutes.
  9. Remove the pan from the oven and let the bread cool inside the pan for 10 minutes to allow the baking process to finish.
  10. Transfer the bread to a wire rack to cool completely for 1 to 2 hours, using a silicone spatula to loosen the sides from the pan if necessary.
