Ingredients
  

Blondie Base
  • 1/2 cup cup unsalted butter browned and cooled slightly
  • 1 cup cup packed light brown sugar
  • 1 large egg room temperature
  • 1 tsp teaspoon vanilla extract
  • 1/4 tsp teaspoon salt
  • 1/2 tsp teaspoon ground cinnamon
  • 1 cup cup all-purpose flour
Apple Filling
  • 3 to 4 medium apples peeled, cored, and diced (about 3 cups)
  • 1/3 cup cup packed light brown sugar
  • 1 tbsp tablespoon all-purpose flour
  • 1/2 tsp teaspoon ground cinnamon
Streusel Topping
  • 1/2 cup cup cold unsalted butter cut into small cubes
  • 1/2 cup cup packed light brown sugar
  • 1 cup cup old-fashioned rolled oats
  • 2/3 cup cup all-purpose flour
  • 1/2 tsp teaspoon ground cinnamon

Method
 

Prepare the Pan and Oven
  1. Line an 8x8-inch baking pan with parchment paper, letting the ends overhang for easy removal. Lightly spray the parchment with nonstick cooking spray. Preheat your oven to 350°F.
Make the Blondie Base
  1. In a large microwave-safe bowl, melt the 1/2 cup butter in the microwave or in a small saucepan over medium heat. Continue cooking until the butter turns a nutty golden brown, swirling occasionally. Remove from heat and let cool for 2–3 minutes.
  2. Stir the brown sugar into the browned butter until well combined. Add the egg, vanilla, salt, and cinnamon, and mix until smooth. Fold in the flour just until no streaks remain. Spread the batter evenly into the prepared pan.
Par-Bake the Base
  1. Bake the blondie base for 15 minutes, while you prepare the apple filling and streusel.
Prepare the Apple Filling
  1. In the same bowl used for the blondies (no need to wash), combine the diced apples, brown sugar, flour, and cinnamon. Microwave on high for 5 minutes, stirring halfway through, until the apples are tender and the mixture is syrupy. Set aside.
Make the Streusel
  1. In a separate bowl, combine the cold butter cubes, brown sugar, oats, flour, and cinnamon. Use your fingers, a fork, or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
Assemble and Bake
  1. After the blondie base has baked for 15 minutes, remove it from the oven. Carefully spread the apple filling evenly over the warm base. Sprinkle the streusel topping over the apples, gently pressing it down with your fingers. Return to the oven and bake for another 18–20 minutes, until the streusel is golden brown and the edges are bubbling.
Cool and Chill
  1. Place the pan on a wire rack and let the bars cool completely to room temperature. Then refrigerate for at least 2–3 hours, or until fully set. Use the parchment slings to lift the bars out of the pan, then slice into 12 squares.

Notes

For a simple cinnamon glaze, whisk 1 tablespoon milk with 1/4 teaspoon cinnamon, then stir in 4 tablespoons powdered sugar until smooth; drizzle over cooled bars.
You can use any firm, tart apple like Granny Smith or Honeycrisp for the best texture.
Store leftover bars in an airtight container in the refrigerator for up to 5 days.
To make ahead, prepare the bars completely, chill, then wrap tightly and freeze for up to 1 month. Thaw in the fridge before slicing.
If your streusel seems too dry, add 1–2 tablespoons melted butter until it holds together when squeezed.
