Ingredients

Cake
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 cup sour cream full-fat, room temperature
  • 1 1/2 cups fresh blueberries or frozen, not thawed
  • 1 tablespoon all-purpose flour for tossing berries
Crumb Topping
  • 1/2 cup light brown sugar packed
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter melted
Optional Glaze
  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk or heavy cream
  • 1/4 teaspoon vanilla extract

Method

Preheat and Prepare Pan
  1. Preheat your oven to 350°F. Grease a 9-inch round or square baking pan, then dust it with flour, or line it with parchment paper for easy removal.
Make the Crumb Topping
  1. In a small bowl, stir together the brown sugar, 1/2 cup flour, and cinnamon. Pour in the melted butter and mix until the mixture forms coarse crumbs. Set aside.
Mix Dry Ingredients
  1. In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, and salt until evenly combined.
Cream Butter and Sugar
  1. In a large bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2 to 3 minutes.
  2. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Combine Wet and Dry
  1. Gradually add the dry ingredients to the butter mixture in three additions, alternating with the sour cream, starting and ending with the dry ingredients. Mix on low speed just until combined; do not overmix.
Fold in Blueberries
  1. In a small bowl, toss the blueberries with 1 tablespoon of flour to help prevent them from sinking. Gently fold the berries into the batter using a rubber spatula.
Assemble and Bake
  1. Spread the batter evenly into the prepared pan. Sprinkle the crumb topping evenly over the top.
  2. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown. Let the cake cool in the pan on a wire rack for at least 20 minutes.
Make the Glaze (Optional)
  1. In a small bowl, whisk together the powdered sugar, milk (or cream), and vanilla until smooth. Drizzle over the cooled cake before slicing.

Notes

For a California twist, swap half the blueberries for fresh blackberries or raspberries. Store leftover cake in an airtight container at room temperature for up to 3 days. You can make the crumb topping a day ahead and refrigerate it. To avoid a soggy bottom, make sure your blueberries are dry before adding them to the batter. This cake freezes well; wrap individual slices tightly in plastic wrap and foil, then freeze for up to 2 months. Serve slightly warm with a dollop of whipped cream or a scoop of vanilla ice cream.
