Brownie Layer
  • 1 box brownie mix any standard 18-ounce box
  • 1/2 cup unsalted butter melted
  • 1 cup chocolate chips semi-sweet or milk
Cookie Dough Layer
  • 1 cup all-purpose flour heat-treated (see notes)
  • 1/2 cup packed brown sugar light or dark
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk any kind
  • 1/4 teaspoon salt

Method
 

Make the Brownie Layer
  1. In a medium bowl, stir together the brownie mix and melted butter until a thick, uniform dough forms, about 2 to 3 minutes.
  2. Roll the mixture into 1-inch balls using your hands or a small scoop. Place them on a parchment-lined baking sheet and refrigerate for 10 minutes.
Make the Cookie Dough Layer
  1. In a separate bowl, combine the heat-treated flour, brown sugar, vanilla, milk, and salt. Mix until a smooth, pliable dough comes together.
  2. Flatten a portion of cookie dough in your palm, place a chilled brownie ball in the center, and wrap the dough around it, sealing the edges completely.
Chill and Serve
  1. Arrange the assembled bombs on the baking sheet, cover with plastic wrap, and refrigerate for at least 30 minutes.
  2. Serve chilled or let them sit at room temperature for a few minutes before enjoying.

Notes

Heat-treat the flour by spreading it on a baking sheet and baking at 350°F for 5 minutes, then let cool completely before using. This ensures the cookie dough is safe to eat raw.
For extra richness, use dark brown sugar and add a pinch of cinnamon to the cookie dough.
Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
If the brownie mixture is too sticky, chill it for 5 to 10 minutes before rolling.
