Pumpkin Loaf
- Preheat the oven to 350°F and lightly grease a 9x5 inch loaf pan with butter or nonstick spray.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, cardamom, and cloves.
- In a large bowl, whisk the eggs, then stir in the pumpkin puree, oil, granulated sugar, brown sugar, and vanilla extract until the mixture is smooth.
- Fold the dry ingredients into the wet ingredients with a spatula, stopping as soon as no dry streaks remain.
Snickerdoodle Layer
- In a small bowl, stir together the sugar, cinnamon, and cardamom until well blended.
Assembly
- Spread half of the batter into the prepared pan. Sprinkle the snickerdoodle sugar mixture evenly over the batter, then carefully spread the remaining batter on top and smooth it with a spatula.
- Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean and the top feels firm.
- Let the loaf cool completely in the pan on a wire rack. Once cool, run a butter knife around the edges and lift the loaf out of the pan to slice and serve.

1. For the best texture, use canned pumpkin puree, not pumpkin pie filling, which contains added sugar and spices.
