  • 5 cups sliced peeled apples (about ¼-inch thick) such as Honeycrisp, Pink Lady, or Fuji
  • ¼ cup apple juice or apple cider
  • 1 to 3 tablespoons granulated sugar adjust to taste
  • 1 tablespoon all-purpose flour
  • ¾ teaspoon ground cinnamon
Topping
  • cup granulated sugar
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ teaspoon ground cinnamon
  • 6 tablespoons unsalted butter melted
  • ½ teaspoon pure vanilla extract
  • vanilla ice cream or whipped cream for serving

Filling
  1. Preheat the oven to 350°F. Lightly grease an 8x8-inch baking dish.
  2. In a large bowl, combine the sliced apples, apple juice or cider, sugar, flour, and cinnamon. Stir until the apples are evenly coated. Transfer the mixture to the prepared dish, including any juices, and spread into an even layer.
Topping
  1. In a medium bowl, whisk together the sugar, flour, baking powder, salt, and cinnamon. Add the melted butter and vanilla, and stir with a rubber spatula until a thick dough forms, similar to sugar cookie dough.
  2. Pinch off pieces of the dough and flatten them into irregular shapes. Place these pieces evenly over the apple filling, leaving small gaps for steam to escape.
  3. Lightly spray a piece of foil with nonstick cooking spray and cover the dish tightly. Bake for 25 minutes. Remove the foil and continue baking for another 25 to 35 minutes, until the apples are tender and the topping is golden brown. Let the cobbler cool on a wire rack for 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

For best results, slice apples ¼-inch thick or smaller so they soften fully during baking. If you prefer a thicker topping, increase the topping ingredients to ¾ cup sugar, 1 cup flour, 1 teaspoon baking powder, ¼ teaspoon salt, 1 teaspoon cinnamon, 1 teaspoon vanilla, and 8 tablespoons melted butter. Leftovers can be covered and refrigerated for up to 2 days; the topping will soften upon reheating in the microwave. For a crispier topping, bake uncovered for the entire time after the initial covered period. You can substitute the apple juice with water or lemon juice mixed with a little honey if needed.
