Method
 

  1. Line a large baking sheet with parchment paper and preheat your oven to 350 degrees Fahrenheit.
  2. In a stand mixer fitted with the paddle attachment, cream together the room-temperature butter, coconut sugar, and granulated sugar until smooth and well combined, about 1 to 2 minutes.
  3. Add the room-temperature eggs and peanut butter, then mix until fully incorporated. Scrape down the sides of the bowl as needed.
  4. Add the einkorn flour, baking soda, baking powder, and salt. Mix just until combined; be careful not to overmix.
  5. Using a large cookie scoop (about 3.2 tablespoons), scoop the dough into balls. Roll each ball in granulated sugar, then place them on the prepared baking sheet about 2 to 3 inches apart. Gently flatten each cookie with a fork to create a crisscross pattern.
  6. Bake in the preheated oven for 12 to 14 minutes, until the edges are golden and the centers are set. This recipe makes 12 large bakery-style cookies; for smaller cookies, adjust the size and baking time accordingly.
