Ingredients
  

Spiced Sugar Topping
  • 1/3 cup granulated sugar
  • 1 teaspoon chai spice blend store-bought or homemade (see notes)
Chai Spiced Snickerdoodle Cookies
  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon chai spice blend
  • 1/2 teaspoon ground cinnamon
  • 1 cup unsalted butter softened to room temperature
  • 1 1/3 cups granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
Chai Latte Buttercream
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar sifted if lumpy
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon chai spice blend
  • 3 to 4 tablespoons heavy cream as needed for consistency

Method
 

Spiced Sugar Topping
  1. In a small bowl, whisk together the 1/3 cup granulated sugar and 1 teaspoon chai spice. Set aside.
Chai Spiced Snickerdoodle Cookies
  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, salt, 1 teaspoon chai spice, and cinnamon.
  3. In a large bowl using a hand mixer or stand mixer with paddle attachment, beat the softened butter and 1 1/3 cups granulated sugar on high speed until light and creamy, about 2 minutes. Add the eggs and vanilla extract, beating on medium-high until well combined.
  4. With the mixer on low speed, gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms. Do not overmix.
  5. Scoop the dough into balls, using about 2 tablespoons of dough each. Roll each ball in the prepared spiced sugar topping to coat evenly. Place the coated dough balls on the prepared baking sheet, spacing them about 3 inches apart.
  6. Bake for 10 to 14 minutes, or until the edges are set and lightly golden. Allow the cookies to cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Chai Latte Buttercream
  1. In a stand mixer fitted with the whisk attachment, beat the softened butter, powdered sugar, vanilla extract, and 1/4 teaspoon chai spice on low speed until combined. Gradually add the heavy cream, one tablespoon at a time, beating on medium-high until the frosting is light, fluffy, and spreadable. Adjust cream as needed for desired consistency.
  2. Once the cookies are completely cool, frost each cookie with the chai latte buttercream. Serve immediately or store in an airtight container.

Notes

For a stronger chai flavor, use a homemade blend of cinnamon, cardamom, ginger, cloves, and nutmeg. If you prefer a less sweet cookie, reduce the sugar in the dough by 2 tablespoons. Store frosted cookies in the refrigerator for up to 5 days; bring to room temperature before serving. For a dairy-free version, substitute the butter with vegan butter and use a non-dairy creamer. To make ahead, prepare the dough and refrigerate for up to 2 days; roll and bake as directed. Avoid overbaking for a chewy texture; the cookies will firm up as they cool.
