Prepare the Oven and Dish
- Preheat your oven to 375°F. Lightly grease a 9x9-inch baking dish (or similar 2-quart dish) with the softened butter to prevent sticking.
Make the Fruit Layer
- In a medium bowl, gently toss the blueberries with the cornstarch, Meyer lemon juice, lemon zest (if using), and cinnamon until evenly coated. Spread the berry mixture evenly in the prepared dish.
Mix the Batter
- In a separate large bowl, whisk together the flour, sugar, baking powder, and salt. Pour in the milk, vanilla extract, and melted butter, stirring just until a smooth, thick batter forms. Do not overmix.
Assemble the Cobbler
- Spoon the batter over the blueberries in an even layer. It will spread as it bakes, so no need to smooth it out completely.
Bake
- Place the dish on the center rack and bake for 45 to 50 minutes, until the top is deep golden brown and the fruit is bubbling around the edges. A toothpick inserted into the batter should come out clean.
Cool and Serve
