Ingredients
  

  • 1 loaf crusty Italian or French bread about 1 pound
  • 1/2 cup salted butter melted, 1 stick
  • 6 cloves garlic minced
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup mayonnaise
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley chopped
  • 1 cup freshly grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes

Method
 

  1. Heat the oven to 400 degrees F.
  2. Slice the loaf in half lengthwise so you have two long open-faced halves.
  3. Place a 24-inch sheet of aluminum foil on a baking sheet and arrange the bread halves on top, cut side up.
  4. In a small bowl, stir together the melted butter, garlic, red pepper flakes, and Italian seasoning. Set aside.
  5. In a separate bowl, mix the mayonnaise, mozzarella, and parsley until thoroughly combined. Set aside.
  6. Brush or spoon the garlic butter mixture generously over both cut sides of the bread.
  7. Use a spatula to spread the cheese and mayonnaise mixture evenly over the bread, all the way to the edges so they do not burn.
  8. Fold the foil loosely over the bread to cover it.
  9. Bake for 10 minutes.
  10. Remove the bread from the oven and unfold the foil.
  11. Sprinkle the grated Parmesan over the top.
  12. Return the bread to the oven, uncovered, and bake for 5 more minutes, until the cheese is golden and bubbly. For a crispier top, broil for the last 1 to 2 minutes, watching carefully to prevent burning.
  13. Let the bread rest for a few minutes, then slice and serve warm.

Notes

Use a crusty Italian or French loaf so the topping holds up without getting soggy.
