Ingredients
Method
- Heat the oven to 400 degrees F.
- Slice the loaf in half lengthwise so you have two long open-faced halves.
- Place a 24-inch sheet of aluminum foil on a baking sheet and arrange the bread halves on top, cut side up.
- In a small bowl, stir together the melted butter, garlic, red pepper flakes, and Italian seasoning. Set aside.
- In a separate bowl, mix the mayonnaise, mozzarella, and parsley until thoroughly combined. Set aside.
- Brush or spoon the garlic butter mixture generously over both cut sides of the bread.
- Use a spatula to spread the cheese and mayonnaise mixture evenly over the bread, all the way to the edges so they do not burn.
- Fold the foil loosely over the bread to cover it.
- Bake for 10 minutes.
- Remove the bread from the oven and unfold the foil.
- Sprinkle the grated Parmesan over the top.
- Return the bread to the oven, uncovered, and bake for 5 more minutes, until the cheese is golden and bubbly. For a crispier top, broil for the last 1 to 2 minutes, watching carefully to prevent burning.
- Let the bread rest for a few minutes, then slice and serve warm.

Notes
Use a crusty Italian or French loaf so the topping holds up without getting soggy.
To make it gluten-free, swap the bread for a gluten-free baguette and check that your mayonnaise and cheeses are certified gluten-free.
You can assemble the bread ahead of time, cover it with foil, and refrigerate for up to a few hours before baking.
Leftover slices keep in an airtight container in the fridge for 2 to 3 days; reheat in a 350 degree F oven until warm and crispy.
If you like a spicier kick, add extra red pepper flakes or a pinch of cayenne to the garlic butter.
Serve this alongside pasta, soup, or salad, or cut it into smaller pieces for an appetizer.
