- Preheat your oven to 350°F and position a rack in the center.
- In a large bowl, cream the softened butter, avocado oil, and granulated sugar together for 3 minutes, until light and fluffy.
- Add the eggs, vanilla extract, mashed bananas, and sour cream, and stir well until smooth and completely combined.
- Gently fold in the all-purpose flour, baking soda, and fine sea salt until just combined and no dry streaks remain.
- Fold 1/2 cup of the mini chocolate chips into the batter.
- Scrape the batter into a greased 8.5 x 4.5 x 2.75-inch loaf pan and smooth the top.
- Scatter the remaining 1/4 cup mini chocolate chips over the batter, then sprinkle with 1 tablespoon granulated sugar.
- Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. After 25 minutes, loosely cover with foil to prevent the top from burning.
- Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
- Once fully cool, keep the loaf in an airtight container at room temperature, or freeze for longer storage. This banana bread freezes well.
