Pumpkin Spice Streusel
- In a small bowl, mix the melted butter, flour, brown sugar, granulated sugar, and pumpkin pie spice until crumbly. Place the bowl in the refrigerator while you prepare the bread batter.
Pumpkin Bread
- Preheat the oven to 325°F. Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the two longest sides so the finished loaf is easy to lift out.
- In a separate bowl, whisk the flour, baking soda, cinnamon, pumpkin pie spice, and salt until combined. Set aside.
- In a large bowl, use an electric mixer or a sturdy whisk to combine the granulated sugar, brown sugar, pumpkin puree, and avocado oil until smooth. Beat in the eggs and vanilla extract.
- Add half of the flour mixture and stir until just incorporated, then mix in the milk, followed by the remaining flour mixture, stirring until no streaks of flour remain.
- Pour the batter into the prepared pan and spread it into an even layer.
- Take the streusel out of the refrigerator and break it into coarse crumbs with a fork or a knife.
- Evenly scatter the streusel over the batter, covering the entire surface. Bake until a toothpick inserted in the center comes out clean, about 1 hour and 20 minutes. If the bread needs more time, continue baking in 5 minute increments.
Maple Glaze
- While the bread bakes, whisk the powdered sugar and maple syrup together in a small bowl until the glaze is smooth.
- Pour the glaze over the hot loaf immediately after removing it from the oven.
- Let the loaf cool in the pan for about 20 minutes, then lift it out with the parchment paper, slice, and serve warm. Store any leftovers in an airtight container in the refrigerator.
