Prepare and Assemble
- Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper.
- On a lightly floured surface, roll your pie dough into a 14-inch circle. Carefully transfer it to the prepared baking sheet.
- Starting in the center, arrange overlapping slices of tomato, mozzarella, and basil leaves in concentric circles, leaving a 2- to 3-inch border of dough around the edges.
- Gently fold the edges of the dough over the filling, pleating as you go, to create a rustic crust.
- In a small bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth.
- Brush the exposed dough edges with a little of the egg mixture. Pour the remaining egg mixture evenly over the tomato and cheese filling.
- Bake for 35 to 40 minutes, until the crust is golden brown and the filling is bubbly and just set in the center.
- Remove from the oven and let cool on the baking sheet for 5 minutes before slicing. Serve warm.
