Ingredients
  

  • 1 1/2 cups cups ripe mashed banana from 3-4 medium bananas
  • 1/2 cup cups packed light brown sugar
  • 1/2 cup cups granulated sugar
  • 1/2 cup cups unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cups plain Greek yogurt 2% or whole; sour cream also works
  • 1 1/3 cups cups all-purpose flour or 1-to-1 gluten-free blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup cups mini chocolate chips plus extra for topping

Method
 

  1. Preheat your oven to 325°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk vigorously for 1-2 minutes until the mixture forms a thick, paste-like consistency. You can use an electric mixer with a paddle attachment if preferred.
  4. Add the mashed bananas to the butter-sugar mixture, then beat in the eggs one at a time, followed by the vanilla and Greek yogurt. Mix until smooth.
  5. Gently fold the dry ingredients into the wet mixture using a spatula until just combined. Fold in the mini chocolate chips, reserving a handful for the top.
  6. Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle the reserved chocolate chips on top.
  7. Bake for 60-75 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the bread cool completely in the pan on a wire rack before slicing.
  8. Once cool, slice and enjoy! Store leftovers in an airtight container at room temperature for up to 3 days.

Notes

For the best flavor, use very ripe bananas with brown spots. You can substitute the yogurt with sour cream if desired. To make it dairy-free, use a plant-based butter and yogurt alternative.
