- Preheat your oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on the long sides for easy lifting.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and 3/4 cup of the chocolate chips until the chips are well coated. Set aside.
- In a separate medium bowl, beat the eggs, vegetable oil, sour cream, sugar, and vanilla extract until the mixture is smooth and fully combined.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix.
- Gently fold the grated zucchini into the batter until it's evenly distributed.
- Transfer the batter to the prepared loaf pan and spread it out evenly. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
- Let the bread cool completely in the pan on a wire rack before removing and slicing.
