Ultra Moist Chocolate Chip Zucchini Bread

This chocolate chip zucchini bread is super moist, with a crackly crust and plenty of melty dark chocolate in every slice.

Ingredients
  

  • 1 1/2 cups finely grated zucchini about 270g or 1 1/2 medium zucchini; squeeze out excess water
  • 2 cups all-purpose flour 264g; spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter 1 stick (113g); melted and cooled
  • 1/2 cup granulated sugar 100g
  • 1/2 cup packed light brown sugar 100g
  • 1/3 cup sour cream 82g; preferably full fat
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups dark chocolate chips about 255g; reserve a handful for sprinkling on top
  • Flaky sea salt for sprinkling, optional

Method
 

  1. Heat the oven to 350°F. Lightly grease a 9x5 loaf pan and line it with parchment paper, leaving some overhang on the long sides so the finished loaf is easy to lift out.
  2. Grate the zucchini on the large holes of a box grater, measure out 1 1/2 cups (270g), then squeeze out the excess liquid with your hands over the kitchen sink. Set the drained zucchini aside.
  3. In a medium bowl, whisk the all-purpose flour, baking soda, baking powder, and kosher salt until well combined. Set aside.
  4. In a large bowl, whisk the cooled melted butter, granulated sugar, and brown sugar until smooth. Add the sour cream, eggs, vanilla, and the squeezed zucchini, and stir until fully incorporated.
  5. Pour the dry ingredients into the wet mixture and fold gently with a rubber spatula until the flour is just moistened.
  6. When a few streaks of flour are still visible, fold in the dark chocolate chips until evenly distributed without overmixing.
  7. Scrape the batter into the prepared pan and smooth the top. Sprinkle a little extra chocolate over the surface, then bake for 60 to 70 minutes or until a toothpick inserted in the center comes out mostly clean.
  8. Move the pan to a wire rack and let the bread cool in the pan for 30 to 40 minutes. Use the parchment overhang to lift the loaf out and let it cool completely on the rack if time allows.
  9. Sprinkle flaky sea salt over the top, slice, and serve.

Notes

To make this loaf dairy-free, swap the butter for 1/2 cup neutral oil and use a dairy-free sour cream alternative.
Do not skip squeezing the zucchini; extra moisture will make the center dense and gummy.
For a less sweet bread, use semisweet or milk chocolate chips instead of dark chocolate.
Store the loaf tightly wrapped at room temperature for up to 4 days, or refrigerate for a little longer.
To freeze, wrap slices individually and store in a zip top bag for up to 3 months.
Warm bread crumbles when sliced, so let the loaf cool completely for clean cuts.
Serve as is or toasted with a pat of butter for an extra indulgent treat.
