Ingredients
  

Cake
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter room temperature
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 1 tablespoon lemon zest from about 2 Meyer lemons, if available
  • 1 tablespoon lemon juice from about 1 lemon
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk room temperature
  • 2 cups fresh or frozen blueberries if frozen, do not thaw
Glaze
  • 1 cup powdered sugar sifted
  • 2 tablespoons lemon juice

Method
 

Prepare the Cake
  1. Preheat your oven to 350°F. Grease a 10-inch Bundt pan generously with butter or baking spray, then dust with flour and tap out any excess.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well blended.
  3. In a large bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy, about 3 to 5 minutes.
  4. Add the eggs one at a time, beating well after each addition. Scrape down the sides and bottom of the bowl. Mix in the lemon zest, lemon juice, and vanilla extract.
  5. Alternate adding the flour mixture and the buttermilk, starting and ending with the flour. Add the flour in three parts and the buttermilk in two parts. Stir gently by hand with a spatula after each addition until just combined.
  6. Before adding the final portion of flour, toss the blueberries with a little flour to coat them. Gently fold the blueberries into the batter until no streaks of flour remain, being careful not to overmix.
  7. Pour the batter into the prepared Bundt pan. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 15 to 20 minutes.
  8. Invert the pan onto a wire rack and carefully remove the cake. Allow it to cool completely before glazing.
Make the Glaze
  1. In a small bowl, whisk together the sifted powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the completely cooled cake, letting it run down the sides. Let the glaze set for about 15 minutes before slicing and serving.

Notes

For the best texture, make sure all refrigerated ingredients (eggs, buttermilk, butter) are at room temperature. If using frozen blueberries, do not thaw them; toss them with flour while still frozen to prevent bleeding. Store leftover cake in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. To make ahead, bake the cake without glaze, wrap tightly, and freeze for up to 3 months; thaw and glaze before serving. Avoid overmixing the batter after adding the flour to keep the cake tender.
