  • 1/2 cup (1 stick) unsalted butter melted in the baking dish
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk well-shaken
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon extract
For the Topping
  • 21 ounces lemon pie filling 1 can, such as Comstock

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F.
  2. Place the butter in a 9x9-inch baking dish and put it in the oven until melted, about 3 to 4 minutes. Carefully remove the dish and set it aside.
Make the Batter
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Add the sugar and whisk again to combine.
  2. Pour in the buttermilk, vanilla extract, and lemon extract. Stir just until the dry ingredients are moistened; do not overmix.
Assemble the Cobbler
  1. Pour the batter evenly over the melted butter in the baking dish. Do not stir.
  2. Drop spoonfuls of the lemon pie filling over the batter, distributing it as evenly as possible.
Bake and Serve
  1. Bake for 45 to 55 minutes, until the edges are golden brown and the center is set.
  2. Let the cobbler cool for about 10 minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
