  • 1/4 cup super-fine almond flour made from California almonds
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons everything bagel seasoning
  • 1 pinch red pepper flakes
  • 1/4 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh herbs such as chives, parsley, or basil, for garnish

Method
 

  1. Preheat the oven to 375 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper.
  2. In a medium bowl, whisk the cottage cheese, eggs, almond flour, garlic powder, and Italian seasoning until smooth, then fold in the shredded cheese.
  3. Pour the batter onto the prepared pan and spread it into an even rectangle about 1/4 inch thick.
  4. Drizzle the melted butter over the surface, then sprinkle with the everything bagel seasoning and red pepper flakes.
  5. Bake for 20 to 25 minutes, until the flatbread is golden brown and the edges are crisp.
  6. Let it cool on the baking sheet for a few minutes before slicing into squares, strips, or triangles. Garnish with fresh herbs if desired.

Notes

Use full-fat cottage cheese; low-fat has more water and yields a softer, less crisp flatbread.
For a nut-free option, replace the almond flour with 1/4 cup all-purpose flour; the texture will be slightly more bready.
Whisk the batter until it is completely smooth so the flatbread bakes evenly.
Don't spread the batter too thin or the edges will over-brown before the center sets.
Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a toaster oven.
