Ingredients
  

For the Chocolate Cookies
  • 1 ¼ cups (155g) all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • cup (17g) Hershey's Special Dark unsweetened cocoa powder or any dark cocoa powder
  • ½ cup (113g) unsalted butter softened
  • cup (134g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Peanut Butter Filling
  • ¼ cup (57g) unsalted butter softened
  • ½ cup (134g) creamy peanut butter
  • ¼ teaspoon salt
  • 1 ½ cups (170g) powdered sugar
  • ½ teaspoon vanilla extract
  • 1-3 tablespoons heavy whipping cream as needed for consistency

Method
 

Prepare the Cookies
  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, salt, baking soda, and cocoa powder. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the softened butter, brown sugar, and granulated sugar until smooth, scraping down the sides as needed. Beat in the egg and vanilla extract, then gradually add the dry ingredients, mixing until just combined. The dough will be sticky.
  4. Scoop tablespoon-sized (or two-tablespoon-sized) balls of dough onto the prepared baking sheets, leaving space between each for spreading. Bake small cookies for 8-11 minutes, or larger ones for 12-15 minutes, until they just lose their glossy sheen. Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Make the Filling and Assemble
  1. In a large bowl, beat the softened butter, peanut butter, and salt with a hand mixer until smooth, about 1 minute. Gradually add the powdered sugar, mixing until thick and smooth. Add the vanilla extract and 1 tablespoon of heavy cream, beating for 30 seconds. Add more cream, 1 tablespoon at a time, until the filling is spreadable but not runny (I usually use 2 tablespoons total).
  2. Pipe or spread the filling onto the flat side of half of the cooled cookies. Top with the remaining cookies to form sandwiches. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 1 month.

Notes

You can make small (1-tablespoon) or large (2-tablespoon) cookies; they spread, so leave plenty of room on the baking sheets. Do not overbake—cookies are done when they just lose their glossy sheen. For a flatter cookie, tap the hot baking sheet on the stovetop after removing from the oven. Feel free to swap the filling with Nutella, mint buttercream, or cream cheese frosting. Store assembled cookies in an airtight container for up to 3 days; freeze unassembled cookies and filling separately for longer storage.
