Lavender Lemon Sourdough Loaf

A soft, moist sourdough loaf with Meyer lemon zest and floral lavender, topped with a glossy purple lavender glaze. Perfect for breakfast or dessert.

Ingredients
  

  • 1 cup granulated sugar 200 g (7 oz)
  • 2 tablespoons finely grated Meyer lemon zest from 3 to 4 lemons
  • 3 tablespoons culinary lavender buds dried, food grade
  • 3/4 cup salted butter, softened 170 g (6 oz)
  • 3 large eggs, room temperature
  • 3 tablespoons freshly squeezed Meyer lemon juice about 1 lemon
  • 1/2 cup unfed sourdough discard, room temperature 120 g (4 oz), 100% hydration
  • 1 1/2 cups all-purpose flour 180 g (6.3 oz)
  • 1 teaspoon baking powder aluminum-free preferred
  • 1/4 teaspoon baking soda helps lift the crumb
  • 1/4 cup whole milk, room temperature 60 ml (2 fl oz)
  • 1 1/2 cups powdered sugar, sifted 180 g (6.3 oz)
  • 3 to 4 tablespoons whole milk for the glaze
  • 1/2 teaspoon lavender extract
  • 2 to 3 drops purple food coloring optional

Method
 

  1. Preheat the oven to 350°F (180°C). Grease a 9x5-inch loaf pan and line it with parchment paper, letting the edges overhang for easy removal.
  2. In a medium bowl, whisk the flour, baking powder, and baking soda together. Set aside.
  3. In a large bowl, combine the granulated sugar, lemon zest, and lavender. Rub the zest and lavender into the sugar with your fingertips until fragrant and the sugar is pale yellow.
  4. Add the softened butter to the sugar mixture and cream with an electric mixer on medium-high until light and fluffy, about 2 to 3 minutes.
  5. Beat in the eggs one at a time, scraping the sides of the bowl after each addition. Mix in the lemon juice until fully combined.
  6. Mix half of the flour mixture into the batter until just combined. Add the sourdough discard and milk, mixing until smooth. Fold in the remaining flour mixture until no streaks of flour remain.
  7. Scrape the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50 to 60 minutes, until the top is golden brown and a skewer inserted in the center comes out clean. If the top browns too quickly, tent loosely with foil.
  9. Let the loaf cool in the pan for 15 minutes, then lift it out using the parchment overhang and transfer to a wire rack. Let cool completely before glazing.
  10. For the glaze, whisk the powdered sugar, 3 tablespoons of milk, and lavender extract in a bowl until smooth. Add the purple food coloring and adjust with extra milk or powdered sugar to reach a drizzling consistency.
  11. Drizzle the glaze over the cooled loaf, let it set for a few minutes, then slice and enjoy.

Notes

If you don't have sourdough discard, substitute an equal amount of plain yogurt and reduce the milk to 2 tablespoons.
Culinary lavender should be food grade. Too much lavender can taste bitter, so measure carefully.
Meyer lemons are sweeter than regular lemons. If using regular lemons, add 1 extra tablespoon of sugar to the glaze if desired.
Store leftover loaf wrapped at room temperature for up to 3 days or refrigerated for up to 1 week.
To make ahead, bake the loaf, cool completely, and freeze without glaze for up to 2 months. Thaw and glaze before serving.
For a cleaner slice, chill the loaf for 20 minutes before cutting with a serrated knife.
The purple food coloring is optional; leave it out for a natural glaze with a pale lavender flavor.
